Tip pooling is when a restaurant combines eligible tips into one pot for a shift (or a day) and splits that pot among a defined group of staff using a written formula. It is not the same as a server handing a busser a few bills at the door, and it is not the same as "everyone keeps what they make." The words matter because the system you name is the system you have to defend.

What is tip pooling, in one kitchen sentence?

At Bliss, we learned this the loud way. If the night's card tips sit in the restaurant until someone decides who gets what, you are pooling. If a guest presses cash into a server's hand and that server never puts it in a house pot, that piece may still be a direct tip — until you require it to be declared into the pool.

I tell new managers: if you cannot explain the split on a whiteboard in two minutes, you do not have a pool. You have a rumour.

How is tip pooling different from tip-out?

Tip-out is a directed share. Classic pattern: servers contribute a percentage of food sales, liquor sales, or their own tips to bartenders, hosts, or the kitchen. The money still starts with one role and is owed to another.

A pool is collective. The group puts eligible tips together first; then the formula assigns shares. You can run both — a kitchen tip-out that then sits inside a larger FOH pool — but you should name each stream so nobody thinks "the 3%" and "the nightly pot" are the same bucket.

If you only keep one grid from this page, keep this one. Pooling, tip-out, and “keep your own” are three different money flows. Tip sharing is the umbrella people say out loud when they mean any of the three.

How does tip pooling differ from "everyone keeps their own"?

Individual tipping is simple until the floor is uneven. A section by the window can out-earn the back dining room for reasons that have nothing to do with skill. Pools exist to pull the team back toward a shared night. They also create new fights: who is in the pool, who is out, and whether a manager who "helped on the floor" takes a share.

Why do restaurants pool tips in the first place?

  • To share a night that the POS split unevenly.
  • To include support roles who never "own" a table.
  • To make the closing conversation about a formula, not a personality.
